Amaranth
The ancient Greeks believed there was a flower that grew on Mount Olympus which had everlasting beauty and symbolized immortality. They called this flower Amaranth-- Greek for "to never fade away." Amaranth is a representation of the color of the flower of the Amaranth plant of which the flower is a deep reddish-rose color. Today the color can describe many variations ranging from a vibrant pink to a deep purple.
An early Greek fable by Aesop describes the legend of the Amaranth's everlasting beauty. He writes a story about a conversation which takes place in a garden between a Rose tree and an Amaranth. The Amaranth envies the Rose because of its beauty and lovely perfume. The Rose replies sadly that it quickly dies, but the Amaranth "blooms forever in renewed youth."
The Amaranth is also a popular topic in poetry. John Milton wrote about the immortal Amaranth flower which lives next to the tree of life in his epic Paradise Lost.
